As much as I love the relaxed feel of summer, Fall brings on a sense of renewal and starting fresh. Gone are the relaxed summer evenings with nothing scheduled and replaced by nights filled with homework and extra curricular activities. This is the perfect opportunity to get our family back into a routine. I use the change of season to plan out a weekly menu and try new recipes. Our family enjoys sitting around the table each night sharing stories from the day and talking about what lies ahead for the week.

Here is the best Southern Fried Pork Chop recipe that will have your family thanking you for getting back into the routine of things and filling their hungry bellies. I like to cook this as a special treat for my guys. They all but lick their plate clean!

Hit up your local Tom Thumb and pick up these ingredients:

Smithfield All Natural Pork Chops (Click here for coupon - available through Safeway Just4U online portal, while supplies last)
2 eggs
Saltine Crackers
Vegetable oil
Salt & pepper
Rosemary

In a large skillet heat up vegetable oil on medium to high heat. In a bowl, beat 2 eggs and set aside. In a separate bowl crush a sleeve of saltine crackers. Take pork chops and coat in egg mixture, then dip in crumbled crackers. Repeat one time, then place in hot skillet. Fry each side for 4-5 minutes. Enjoy!
