Fried Coke Balls

The excitement of the NCAA® March Madness is in full force. Our nights are filled with watching the tournament, checking our brackets and snacking on some delicious game day treats. Of course I have to make treats, how else will I get my child to sit down long enough for me to catch some of the action?! That’s where these wonderful fried Vanilla Coke dessert balls come into play.


While grocery shopping this weekend, I grabbed some Coca-Cola NCAA® Final Four Packs available at Walmart. They come in Coke Zero, Vanilla Coke and Cherry Coke and can get 4 4-packs for $5 or 2 packs for $3. Of course I grabbed four so I can use some for baking and the rest for drinking.

Fried Coke Balls

These Fried Coke dessert balls are guaranteed to be a crowd pleaser.

Ingredients:
2 cups Vanilla Coke (any flavor will work)
¼ cup granulated sugar
3 cups flour
2 tsp baking powder
3 eggs
1 tsp salt
Vegetable Oil for frying
½ cup powdered sugar
Syrup

Directions:
Heat oil to 375°F.

In a large bowl (or mixer) mix the Vanilla Coke, granulated sugar and eggs. Then add flour, baking powder and salt to the Vanilla Coke mixture. Mix until batter dough is formed.

One at a time, place 2 inch dough balls in the oil. Fry for 2 minutes until golden brown. Transfer to paper towels to cool. Repeat until all dough has been fried.
