I may not have the shooting skills to play college hoops, but I am ballin’ when it comes to whipping up delicious game day meals. Just because we are hanging out watching college basketball games all weekend, doesn’t mean we can’t enjoy a festive meal. I don’t know about you, but my guys need real food to get them through all the basketball watching excitement.
So this weekend while out grocery shopping at Walmart, I decided to pick up Delimex® Frozen Chicken Taquitos and Beef Tamales to create a quick and easy Mexican fiesta that I could whip up in between the games. I used this $1 off coupon on any TWO Delimex® Frozen Taquitos (excludes Fruit Taquito products) which is valid from March 9 through April 7.
As a side dish to go along with the taquitos and tamales, I decided to set up an avocado bar. Avocados are wonderful on their own, but add a few additional toppings and bam…nothing but net!

Avocado Bar Ingredients:
4 avocados
3 cups Pico de Gallo
2 cups shredded cheese
1 cup cilantro

Directions:
Cut avocados in half and remove the pits. Lay out a platter with avocado halves and bowls of the Pico de Gallo, cheese and cilantro. Let guests top their avocados with ingredients they choose. So simple, yet delicious!

The avocado bar is the perfect pairing to go along with the beef tamales and taquito-tini. The taquito-tini is a great one cup dish. It looks fancy (which is always fun) but lets you hold the taquitos, pico and guacamole. No need for a fork – use the taquito to scoop up the veggies.
