During the summer I try to make meals for my family that are quick, light and don't require that I turn on the oven. With temperatures already reaching close to 100, the last thing I want to do is heat up the house even more with the oven.
So while perusing the aisles at Walmart looking for new microwaveable side dishes I came across the new Birds Eye Steamfresh Protein Blends. These sides are easy to make and goes well with just about any dinner! I picked up the Southwest Style, which goes nicely with my BBQ grilled chicken & pineapple quesadillas. Make these with Tyson Grilled & Ready Chicken Breast Fillets and you won't have to turn on the oven. These precooked, 100% natural and made with white meat chicken breasts can easily be heated up in the microwave.
1 cup pineapple chunks
1 tsp butter
Heat up your chicken and set to the side. In a small pan and butter and sauté chopped jalapenos and onions.
In a separate skillet add a tortilla, chicken, onion mix, cheese, pineapple chunks and drizzle on BBQ sauce to one side of the tortillas. Fold in half and pat down. Cook for about 3 minutes on medium to high heat and then flip and cook other side. Remove from skillet and cut into thirds.
Repeat this step with remaining tortillas. Serve warm.
These easy and hearty quesadillas are made almost once a week during the summer. Even your pickiest eater will love them!
