Lately I feel like have been in a cooking rut. You know, making the same recipes over and over again for dinner. I think partly it’s because my family and I are in a no going out to eat stage, and so of course that is all I want to do. Don’t you just hate that?

Anyways, while on my weekly grocery shopping trip to Walmart I made a point to purchase new items so that I could come up with recipes that my family would not dread eating – again. I picked up the staples and then while in line at the deli counter I saw the Boursin® cheese and knew I had to pick up a couple items.

My son LOVES cheese and doesn’t want to eat anything unless cheese is involved. So naturally I picked up a couple different flavors to make with the chicken and some to use for appetizers and snacks. This spicy chicken recipe is now my go-to chicken meal because my guys loved it. Plus it’s so simple and quick!

Ingredients needed:
Chicken breasts
Monterey Jack & Spicy Pepper Cheese Dip
1 jalapeno, chopped
½ onion, chopped

Directions:
  1. Bake chicken at 400 degrees until it’s golden brown and thoroughly cooked.
  2. Take out of oven and add the cheese (more is always better.)
  3. On top of the cheese add the onion and jalapenos.
  4. Bake for another 5-10 minutes or until the cheese is melted.
  5. Serve and enjoy!

Seriously, it’s that simple and so delicious. Feel free to have an appetizer of Boursin® Garlic & Fine Herbs Cheese with crackers while you are waiting for dinner to be served. This is also a great appetizer to serve when hosting your upcoming holiday parties!
