Like most people, one of my main goals for the New Year is to live a healthy lifestyle. I’m not talking about going on a diet, but simply making better choices so that I can reach my goal weight (and keep it off), as well as to be physically fit. I need more energy and strength so I can keep up with my energetic four year old!

I am working on these 5 things so that I can meet my health goals:
  1. Lift weights – My goal is to hit the gym 3 days a week and the rest of the week, do some sort of fun activity with the family. Typically it’s playing basketball or going on walks around the neighborhood.
  2. Less sugar – Cut out unnecessary sugar in my diet. Replacing sugar with Truvia is a great way to cut out calories, but keep all the great taste and sweetness in your food.
  3. Stay hydrated – I need to drink more water – lots and lots of water!
  4. Get a good night’s sleep – Now that my son finally sleeps all night, I can get to bed at a decent time and get my needed 8 hours.
  5. Say no – It is OK to tell others no. No reason to add more to my to-do list and get stressed for no reason.

I know I can reach this goal if I stay organized and plan out my week - especially when it comes to meal planning. It's easier to plan when you go to Walmart with a grocery list so you make sure you get everything on your list. That's where I picked up the Truvia Natural Sweetener Spoonable. I have been using my crockpot lot lately, so that I have time to head to the gym after work and not worry about making dinner when I get home. This pulled pork taco recipe is something I make on the regular.

Ingredients needed:
Pork loin
2 tbsp. Truvia (I used Truvia Spoonable)
1 tbsp. cumin
1tbsp cayenne pepper
1 tbsp. pepper
1tbsp garlic salt
1 cup onion, chopped
1 jalapeno, chopped
1 cup chicken broth
Pico de Gallo
Shredded pepper jack cheese
*Using Truvia still gives the meat a sweet taste, but without the added calories. Not only does it give a great flavor to the pork, it also helps me stay on track with my fitness goals!

  1. Pour chicken broth in crockpot.
  2. Place pork loin in pot and turn on high.
  3. Sprinkle all dry ingredients on top of pork loin.
  4. Add onions and jalapenos to pot.
  5. Cook for 3-4 hours (depending on size.)
  6. With fork, pull pork apart.
  7. Place pork on tortillas, add Pico, cheese and enjoy!
