Fiery Peach Salsa
6 cups peeled, diced, hard under-rip peaches
1 cup sugar
1 cup chopped bell pepper
1 cup apple cider vinegar
1/2 cup chopped red onion
1/2 cup water
1/4 cup lime juice
1/4 tsp salt
2 jalapeño peppers, seeded and finely chopped
2 garlic cloves, minced
1 habanero pepper, seeded and minced
1/4 cup chopped fresh cilantro
Combine all ingredients, except cilantro, in a 6-qt stainless steel or enameled Dutch oven. Bring to a boil over high heat, stirring until sugar dissolves. Reduce heat, and simmer, uncovered, 5 minutes. Remove from hear; stir in cilantro.
Ladle hot mixture into a hot jar, leaving 1/2-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar. Apply band, and adjust to fingertip-tight. Place jar in boiling water canner. Repeat until all jars are filled.
Process jars 10 minutes, adjusting for altitude. Turn off heat; remove lid, and let jars stand 5 minutes. Remove jars and cool.
